Granny’s recipe, (the secret lies in how the dough is mixed) INGREDIENTS
- 1 Kg of flour 00 (if possible the brand should be spadoni gran mugnaio)
- 120 grams of lard
- warm water (both in winter and summer)
Directions: Make a mound of the flour with a well in the middle and knead with the lard and salt. When the lard is melt make again a mound with a well in the middle, add warm water, knead again until the dough is consistent, a bit more thick than pizza dough. Leave it stand for about an hour and a half under a glass or plastic bowl. Afterwards make small loaves out of the dough and roll them with a rolling pin. To cook them use a cast iron pan if possible.
